RAVA BARFI:
Rava Barfi or Sooji barfi is an aromatic and rich Indian dessert that melts away in your mouth right after you eat. This is mostly prepared for festivals and special occasions. Usually, this Rava Barfi is made differently in every household with the same set of ingredients. In this article, you will find one of the most prominent Rava barfi recipes.
INGREDIENTS:
· Golden bansi Semolina or Rava - 1cup
· Grated fresh coconut - 1cup
· Gram flour or all-purpose flour - 1/2cup
· Sugar - 2cups
· Milk - 1cup
· Clarified butter(Ghee) - 3/4cup
· Cardamom powder - 2pinches
· Dry fruits of your choice - 3tbsp
INSTRUCTIONS:
1. Roast Golden bansi rava with ghee till golden brown and keep it aside.
2. Pour 1/4 cup of clarified butter into a thick pan and add Gram flour or maida, roast it till it turns aromatic. Make sure you keep on stirring the flour to prevent it from burning. Later add the roasted rava and give it a proper mix.
3. Now, to the same pan add milk, sugar, and grated coconut and mix it thoroughly to prevent any lumps on a low flame.
4. When the mixture starts thickening add the remaining Clarified butter, cardamom powder and let it cook for a minute or two.
5. Now, transfer the barfi mixture into a greased pan and level it up equally with a spatula.
6. Allow this mixture to cool down, when it is slightly hot cut it into pieces and cool them completely, and store in an airtight jar.
7. You are good to go for a week with a jar full of happiness.
CARAMEL RAVA PUDDING:
Caramel rava pudding or sooji pudding is close to a caramel custard. This pudding has an incredibly soft texture to it. Though caramel rava pudding sounds super fancy it is easy to make. Let's get straight into the recipe.
INGREDIENTS:
· Milk - 2cups
· Golden bansi rava - 1/4cup
· Sugar - 1/3cup
· Custard powder - 2tbsp
· Water - 1/2cup
INSTRUCTIONS:
1. Add 1/2 cup sugar and 2tbsp water to a thick bottomed pan and caramelize it. Make sure you keep stirring it in the middle to prevent burning.
2. Pour the caramel into a greased mold.
3. Now, take a small cup, add 2tbsp custard powder, 1/4cup water and mix it well without any lumps.
4. Take another thick bottomed pan and add 2cups of milk, 1/2 cup sugar, and cook on a medium flame until it starts boiling.
5. To the boiling milk add 1/4 cup Golden bansi rava and cook for a min in a low flame. While it is cooking add the custard mixture into the pan and cook until it thickens.
6. Now, pour this mixture into the caramelized mold and place this in a steamer or a pan with 1/4cup water with a covered lid and let it cook for 30-35 mins on low flame.
7. Remove the pudding and let it cool to room temperature.
8. Cut the pudding into pieces and refrigerate for two hours.
