Broken wheat, also known as cracked wheat, Daliya, Bulgar, Lapsi, Bulgur, etc. is made by milling whole wheat grains. It is high in fiber, low in calories, and very good for weight loss, thus containing all the benefits of wheat flour.
Broken wheat daliya can be used for making several delicious recipes. In this article, we will see some interesting and savoury recipes made from broken wheat daliya.
INGREDIENTS:
1 Cup Dalia (broken wheat)
1 cup finely chopped onion
1/4 cup green peas (matar)
1/4 cup finely chopped carrot
1/4 cup finely chopped green beans
1 tablespoon peanut
1 tablespoon cashews, sliced
1 – 2 green chili, chopped
Salt to taste
1 teaspoon mustard seeds (rai)
1 teaspoon cumin seeds (jeera)
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Juice of 1 lemon
2 tablespoon cooking oil
1.5 cup of water
INSTRUCTIONS:
Dry roast Daliya over low heat till it turns aromatic.
Now in a cooker add oil and add mustard seeds, jeera, peanuts, and cashews.
Now, add chopped onions and chilies till they turn golden brown.
Later add all the vegetables and saute all the vegetables.
Add the roasted daliya, salt, and water to the pan and cover with the lid.
Cook the daliya in the pressure cooker for up to three whistles.
Later remove the dailya add ghee and garnish it with coriander.
Serve the Dalia upma with coconut chutney and sambar for an authentic taste.
2. SWEET DESSERT LAPSI
INGREDIENTS:
1/2 cup broken wheat (dalia)
1/2 cup sugar
1/2 tsp cardamom (elaichi) powder
1/2 tbsp ghee
A few almond (badam) slivers and pistachio slivers
INSTRUCTIONS:
Heat the ghee in a non-stick kadhai, add broken wheat and stir well for 5-7 minutes at low flame until it turns golden brown.
Then add 2 cups of water to the mixture, cook on a high flame till the water starts boiling.
Now slow down the flame and cook for 15-17 minutes.
Now add sugar and cardamom powder, mix well and cook well for 5-7 minutes on a slow flame, till the ghee separates.
Serve the lapsi hot in a plate and garnish with almond & pistachio slivers
3. BROKEN WHEAT SALAD WITH CHICKPEAS
INGREDIENTS:
2 cups broken wheat (daliya) (soaked in hot water for 15-20 mins and drained)
1 green capsicum
1 red capsicum
2 1/2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp chopped fried garlic
1 cup boiled kabuli chana
1/4 cup chopped parsley salt
INSTRUCTIONS:
Apply 1/2 tbsp of oil evenly over the green and red capsicum. Pierce each of them with a fork and roast on a medium flame until they turn black.
Now immense the capsicum in water and. Remove the skin, stem and seeds and chop into cubes.
Now add soaked broken wheat, capsicum, boiled kabuli chana, lemon juice, chopped garlic in a bowl and toss well.
Serve as snacks, or with lunch and dinner.
4. DALIA CHEELA
INGREDIENTS:
1 cup Dalia (Cracked / Broken wheat)
1 cup Moong Dal (Green Gram Lentil)
1 small finely Chopped Onion
1 tbsp finely chopped Coriander
2 – 3 tbsp grated Carrot
1″ piece of ginger
1-2 Green chilies or to taste
Salt to taste
Ghee / Oil
INSTRUCTIONS:
Soak the Dalia and dal for 3 to 4 hrs.
Then drain the water and grind it in the blender with ginger and green chilies. It is important to remember to add water gradually such that the batter should have a spreadable consistency neither too thick nor too thin.
Add chopped onions, carrot, fresh coriander, salt and mix well.
Heat a frying pan on medium heat and add a few drops of oil.
Add one ladle full of the batter and spread it like a dosa in a circular motion.
Let it cook for a few minutes and when it turns brown at the bottom, then flip and cook on the other side until brown.
Serve hot with green dhania chutney or red chili garlic chutney, or even sauce of your choice.
