RAVA KESARI RECIPE:
Rava Kesari is a velvety, easy to make luscious South Indian dessert. This is also known as the Kesari bath. This recipe will leave your mouth full of flavor, and subtle texture.
INGREDIENTS:
Semolina - 1cup
Sugar - 3/4 to 1 cup
Water - 2 1/2 cups (you can replace water with milk if you want)
Cardamom powder - 1 pinch
Saffron - 1 pinch (optional)
Clarified butter(ghee) - 7 tbsp
Dry fruits - according to your taste
INSTRUCTIONS:
Heat two tablespoons of clarified butter in a thick based pan and roast dry fruits till golden brown.
Now, remove the dry fruits from the pan and add semolina in the pan and roast it until it turns aromatic.
To the roasted semolina add water, while adding water make sure you whisk properly to prevent lumps.
Later, cook the semolina in water for a min of 6-7 mins on low flame.
When you notice the semolina is boiling add sugar and mix it thoroughly.
Continue stirring till the extra water is evaporated and the mixture gets thickened.
Before turning the flame off add cardamom powder, saffron, and the remaining clarified butter and give it a nice stir.
